There’s nothing that quite compares to our tangy, gooey lemon bars, freshly dusted with powdered sugar. Lemon everything was my Grandma’s favorite, but her eyes LIT UP when she took one bite of these beauties. If you’ve tasted one, then you know what I’m talking about. Cue the heart eyes.
These little labors of love are a seasonal favorite in the bakery! Our Lemon Bar crust is a slightly sweet shortbread that holds all of the lemon goodness in. Unsalted butter is the hero of this layer...creating the tender, melt-in-your-mouth base.
But we all know where the magic is! We whisk freshly squeezed lemon juice, lemon zest, eggs, sugar, and a little bit of flour together to make the filling.
After our giant pans of lemon bars are baked & cooled, it’s time to finish! A little secret: We use a ruler to mark and then cut them. While this takes a little extra time and a very sharp knife, it is the best way we’ve found to make sure we end up with clean cut sides and consistently sized bars.
We carefully sift powdered sugar onto every bright square, making sure to cover every nook and cranny.
